Wolfgang Puck Shares His Vision for the Governors Ball Menu for the 20th Anniversary of Preparing the Cuisine for this Year
The Governors Ball Features a Local, Organic and Sustainable Menu
We spoke with Wolfgang Puck about this year’s menu and we found out how much care is taken to find sustainable seafood, natural poultry, and locally farmed organic produce, including:
- 250 pounds troll-caught Atlantic Bigeye
- 17 whole US wild caught yellowtail
- 1,300 farmed oysters
- 5 kilos American farm-raised caviar
- 7,500 individual US shrimp
- 1,250 stone crab claws
- 20,000 pieces of California-grown micro greens
- 5,000 cage-free eggs
- 150 pounds of organic sugar
- Meat, poultry, and dairy goods raised without hormones or antibiotics

Recycle, Reuse and Repurpose
Any good host will prepare for the masses and then some, but we’re happy to report that any of the unused, prepared food will be donated to LA Specialty Chefs to End Hunger, an organization established to create awareness, educate and offer ways to contribute to end hunger.
You’ll be happy to know that all plastics, metals, glass, paper and cardboard is recycled. Floral arrangements will be composted and floral containers will be recycled. In addition to recycling, the event also repurposed plywood for the design, uses energy saving practices from energy efficient LED’s for event lighting to environmentally friendly paint used by Lux Lounge EFR. Much of the furniture, rigging gear and lighting are also rented. Even though the flowers are only used for one night, many of the arrangements have a longer shelf life, so a percentage of the floral arrangements will also be donated to homes for the aging.
